糖醋排骨 Sweet and Sour Pork Ribs

材料:
排骨350公克、大番茄1顆、洋蔥1/2顆、蔥1根、薑適量、青椒1顆、蒜仁3顆、紅辣椒1/2根

Ingredients:
350 grams pork ribs
1 large tomato
1/2 bulb onion
1 length green onion
Suitable amount of ginger
1 green pepper
3 garlic cloves
1/2 hot red pepper


醃料:
白胡椒粉1/2茶匙、鹽1/2茶匙、香油1小匙、醬油少許、米酒1小匙、白醋1大匙、太白粉1大匙

Marinade:
1/2 teaspoon white ground pepper,
1/2 teaspoon salt,
1 teaspoon sesame oil,
a little soy sauce,
1 teaspoon rice wine,
1 tablespoon of white vinegar,
1 tablespoon of cornstarch


調味料:
番茄醬2大匙、水適量、醬油少許、砂糖1小匙、香油1小匙、鹽少許、白胡椒少許、太白粉水適量、白醋1小匙

Seasoning:
2 tablespoons of tomato ketchup,
sufficient water,
a little soy sauce,
1 teaspoon granulated sugar,
1 teaspoon sesame oil,
a little salt,
a little white pepper,
some cornstarch mixed with water,
1 teaspoon white vinegar

作法:
1. 將排骨洗淨、切小塊,放入醃料中醃漬約10分鐘,再放入約180℃的油鍋中,炸至排骨上色再撈起濾油備用。
2. 大番茄、青椒、洋蔥切小塊;蔥切小段;蒜仁與紅辣椒、薑切片備用。
3. 取一支炒鍋,先倒入少許沙拉油,再加入作法2材料以中火先爆香。
4. 再加入所有調味料與炸好的排骨燴煮一下,最後讓湯汁略收一下即可。

Preparation Instruction:
1. Wash the ribs, cut into small pieces, add to the marinade and cure for about 10 minutes, then put into a deep fry pan at about 180 ℃. Fry until there is a deep fry pork color, then picked out and drain the oil.
2. Cut the large tomato, green pepper, and onion bulb into small pieces; cut the green onion into small pieces; set the garlic cloves along with the hot red pepper and ginger slices aside.
3. Take a frying pan, pour in a little salad oil first, then add the 2 sets of ingredients and cook over a medium flame until the aroma comes forth.
4. Then add all the seasonings and the deep fried pork ribs, braise and cook it. Finally, let the soup broth be partially absorbed.
